Day 5, thankful for...

Day 5, I am thankful for an amazing mom.  I cannot imagine my life without her in it.  She has played a major role in being my friend since I was old enough to understand she wasn't just being a "mean mom"!  She is an incredible listener, hard working, bend over backwards to help you out, loving, intelligent, funny, amazing and all around SUPER FANTASTIC gal!  :)  


I love you, Mom!







Day 4, thankful for...

Day four, I am thankful for coffee.  I am stealing today's thankful from my niece, Marie!  Daylight savings and littles just is not a good combination!  Sleeping in because we are silly and change the clocks is definitely NOT on the list of activities approved by the littles!  But, I did add a piece of my blueberry coffee cake to my coffee which helped a little!  Here's the link if you are interested!

Day 3, thankful for....

Day three, I am thankful for our wonderful home.  Thank goodness we were able to find such an amazing place to live.  We are in the country, where the kids can play without us having to worry about town traffic.  One of the many favorite spots we have at home is the front yard, play area.  The kids have a slide, tower, swing combo and two tire swings to enjoy.  We spend a lot of time playing in this spot!

Headbands

I don't know about everyone else, but I can not find a headband that Sophie will keep in her hair.  It is either too tight and hurts, too lose and falls off or is just ridiculous and won't keep any hair out of her face!  Well, I decided that I was going to take a shot at trying to crochet a headband for her.  She thought this was absolutely awesome since Mom was going to "make" her something!  It turned out pretty darn cute and the plus side...it stayed in her hair!  All day long!  






Maybe I am biased because she is my daughter, but I think it turned out absolutely gorgeous!  And having such a cute stinking model makes my work even easier!

Day 2, Thankful for...

Day two, I am thankful for all of these wonderful kids in my life.  Anyone who ever said having a blended family was easy, never had one.  Troy had two children from a previous marriage.  Kaitlynn, age 18 and Kraig, age 16 (almost!).  I had one child from a previous marriage.  Logan, age 9.  Once we were married, we had two children together.  Sophia, age 3 and Henry, age 20 months.  It is a little difficult to get them all to cooperate for a pic, so this one is a little old ( about 4 months).  I cannot imagine my life without every single one of these amazing children being a part of it.  I love them all to pieces!

Thankful for...

I think that I need to be thankful for things more than one day a year.  While I know that I am, sitting down and writing it down makes me think about it even more.  So, for November, my goal is to write a post every day about things I am thankful for.  

Today, I am thankful to have the father of my two littlest children be a constant in their lives.  I see every day what it can do to a child whose father is an every other weekend kind of dad and while I wish things were different for my oldest son, it is a blessing to know that he does have a step dad that loves him and makes him a part of his life every day.  :)

Blueberry Coffee Cake

Blueberries and coffee...hhhmmmm....what could be better to start out the day?  Well, ok, sleeping in and not having to eat breakfast would be fantastic, but with two littles and one in school, that is pretty much just a dream at this point!  So, instead, I get to enjoy yummy things like this!  It is an okay trade off!  Very simple recipe, worth the 10 minutes that it took to whip it together!

Blueberry Coffee Cake
4 tbsp butter, melted and slightly cooled
2 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup milk
2/3 cup sugar
2 eggs
3 cups blueberries

Topping:
1 cup brown sugar
2/3 cup flour
1 tsp cinnamon
1/4 cup cold butter cut into pieces


Mix dry ingredients in medium bowl.  Combine milk, sugar, eggs and butter in another bowl.  Stir milk mixture into dry mix.


After well mixed, fold in the blueberries gently.  Pour into greased 9X13 pan.  Mix topping in a food processor on pulse until crumbly.  If you don't have a food processor (like me) it is very easy to mix by hand.  Sprinkle on topping and bake at 350 for 50-60 minutes.
